Thyme Mousse Stuffed Onion Recipe
Adapted from From Emeril's Kitchen: Favorite Recipes from Emeril's Restaurants. This is a great side dish for an elegant dinner. It's so flavourful. You can use whichever herb would pair best with your main course if thyme doesn't suit.

Ingredients
  • 6 small red onions
  • 1 cup Mascarpone cheese
  • 1/4 cup Parmesan + 2 Tbsp - finely grated
  • 1 garlic clove
  • 1 Tbsp fresh thyme - finely chopped (or use whichever herb you like)
  • 1 tsp white pepper
  • Olive oil
  • Salt
  • Fresh ground black pepper
  • Thyme sprigs for garnish

Directions
  1. Preheat oven to 425 degrees.
  2. Peel the onions, slice a little off the bottom to allow for the onion to sit upright and slice the top 1/3 off. Brush with olive oil and roast for 45 minutes until nice and soft.
  3. Remove the inner layers of onion leaving a shell to hold the filling - should be 2 layers thick. Place a piece of the removed onion at the bottom of each to plug up any hole and prevent the filling from seeping out.
  4. Finely chop the removed portion of cooked onion and add to a bowl along with the Mascarpone, 1/4 cup Parmesan, garlic, pepper and chopped thyme. Combine well and stuff the onion shells.
  5. Sprinkle them with the remaining Parmesan and freshly ground black pepper and return to the oven to bake an additional 15-20 minutes or until the tops are golden.
  6. Garnish with thyme sprig in the centre and serve immediately.
