Frontier Baked Beans

- • 2 pounds cooked navy beans or other white beans shopping list
- • 1 1/2 cups tomato juice shopping list
- • 1 cup chopped pecans, toasted shopping list
- • 3/4 cup dark brown sugar (or less) shopping list
- • 3/4 cup strong black coffee shopping list
- • 1/2 medium red onion, chopped shopping list
- • 1/2 cup catsup shopping list
- • 1/2 cup bourbon shopping list
- • 4 slices slab bacon, chopped shopping list
- • 1 carrot, finely grated shopping list
- • 2 Tablespoons unsulphured dark molasses shopping list
- • 2 Tablespoons dry mustard shopping list
How to make it
- Preheat oven to 350ºF.
- Mix all ingredients together in a large bowl, then pour it into a baking dish.
- Bake the beans, uncovered, about 1 1/2 hours or until they have thickened and cooked down, with a "skin" just beginning to form on the top of the beans.
- These beans reheat well and will keep in the refrigerator for several days.
