Tenderloin Steaks With Arugula And Sweet Pickle Relish

- 4 beef tenderloin steaks shopping list
- 1 tablespoon cracked pepper shopping list
- 1/2 teaspoon salt shopping list
- 3 tablespoons olive oil shopping list
- 1/3 cup snipped fresh flat leaf parsley shopping list
- 3 tablespoons finely chopped sweet pickles shopping list
- 2 tablespoons capers drained and coarsely chopped shopping list
- 1 medium green onion chopped shopping list
- 1 tablespoon balsamic vinegar shopping list
- 3 cups torn arugula shopping list
How to make it
- Trim fat from steaks then rub both sides of steaks with salt and pepper.
- In a large skillet heat 1 tablespoon of the olive oil over medium heat.
- Cook steaks in oil 8 minutes per side.
- Combine remaining olive oil, parsley, pickles, capers, green onion and balsamic vinegar.
- To serve transfer steaks to a cutting board and cut into thin slices.
- Arrange arugula on dinner plates then top with steak slices and relish.
