How to make it

  • Trim fat from steaks then rub both sides of steaks with salt and pepper.
  • In a large skillet heat 1 tablespoon of the olive oil over medium heat.
  • Cook steaks in oil 8 minutes per side.
  • Combine remaining olive oil, parsley, pickles, capers, green onion and balsamic vinegar.
  • To serve transfer steaks to a cutting board and cut into thin slices.
  • Arrange arugula on dinner plates then top with steak slices and relish.
