Tenderloin Steaks With Arugula And Sweet Pickle Relish Recipe
This is an amazing recipe. Compliments of my friend Johnny who is an amazing grill cook. This is his original recipe and one that deserves a blue ribbon in my opinion.

Ingredients
  • 4 beef tenderloin steaks
  • 1 tablespoon cracked pepper
  • 1/2 teaspoon salt
  • 3 tablespoons olive oil
  • 1/3 cup snipped fresh flat leaf parsley
  • 3 tablespoons finely chopped sweet pickles
  • 2 tablespoons capers drained and coarsely chopped
  • 1 medium green onion chopped
  • 1 tablespoon balsamic vinegar
  • 3 cups torn arugula

Directions
  1. Trim fat from steaks then rub both sides of steaks with salt and pepper.
  2. In a large skillet heat 1 tablespoon of the olive oil over medium heat.
  3. Cook steaks in oil 8 minutes per side.
  4. Combine remaining olive oil, parsley, pickles, capers, green onion and balsamic vinegar.
  5. To serve transfer steaks to a cutting board and cut into thin slices.
  6. Arrange arugula on dinner plates then top with steak slices and relish.
