How to make it

  • Skin pineapple and dice reserving 1/4 of the fruit then process in food processor until smooth.
  • Strain into a pan then add vanilla bean, sugar and fresh ginger.
  • Cook over medium heat until thickened about 8 minutes then remove pineapple sauce from heat.
  • Scrape seeds from vanilla bean and stir seeds into sauce and discard pod.
  • Combine warm sauce with remaining pineapple and spoon over tropical fruit.
  • Sprinkle with crystallized ginger.
