Potato Carrot Vichyssoise Recipe
POTATO CARROT VICHYSSOISE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greene Estate in Mesquite, Texas in 1991.

Ingredients
  • 5 cups chicken stock
  • 1 bunch green onions sliced
  • 1 pound carrots peeled and sliced
  • 1 large potato peeled and diced
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup chopped chives

Directions
  1. In large saucepan bring stock to a boil then add onion, carrot and potato and cook 15 minutes.
  2. Remove half of the mixture to a food processor and purée.
  3. Reheat with remaining soup then season with salt and pepper and sprinkle with chives.
