Potato Carrot Vichyssoise

- 5 cups chicken stock shopping list
- 1 bunch green onions sliced shopping list
- 1 pound carrots peeled and sliced shopping list
- 1 large potato peeled and diced shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/4 cup chopped chives shopping list
How to make it
- In large saucepan bring stock to a boil then add onion, carrot and potato and cook 15 minutes.
- Remove half of the mixture to a food processor and purée.
- Reheat with remaining soup then season with salt and pepper and sprinkle with chives.
