Ingredients
  • 12 oz lentils washed
  • 2 table spoons olive oil
  • 1 small onion, med. dice
  • 2 carrots, med. dice
  • 1 stalk celery, med dice
  • 2 cloves fresh garlic, mince
  • 1 bay leaf
  • 2 teaspoons sage
  • 2 quart home made chicken stock or good quality store bought
  • Fresh ground black pepper to taste

Directions
  1. Wash lentils
  2. Heat olive oil in heavy 6 quart pot
  3. Saute diced onion, carrot, celery, bay leaf and black pepper
  4. toward the end add garlic but do not brown
  5. add chicken stock
  6. add lentils
  7. bring to boil
  8. cover and simmer 90 minutes
  9. serve plain or with a table spoon of sour cream on top
  10. Freezes well
