How to make it

  • Wash lentils
  • Heat olive oil in heavy 6 quart pot
  • Saute diced onion, carrot, celery, bay leaf and black pepper
  • toward the end add garlic but do not brown
  • add chicken stock
  • add lentils
  • bring to boil
  • cover and simmer 90 minutes
  • serve plain or with a table spoon of sour cream on top
  • Freezes well
