Ingredients
  • 2 T butter
  • 1 - 15 oz can diced tomatoes (I like the Muir Glen Organic Fire Roasted)
  • 1 can navy beans (organic Eden Foods is my favorite)
  • 3 cloves garlic
  • enough angel hair pasta to feed three
  • shredded parmesan cheese
  • freshly ground pepper

Directions
  1. Set a pot of water to boil
  2. While water is boiling, open the two cans and dump them into a pot. (If you have cats, shush them away at this time - it's beans for goodness sake)
  3. Add butter into the beans and tomatoes. Now crush the garlic cloves and add them in too.
  4. Cook over medium heat, stirring occasionally.
  5. Check water - if ready cook the pasta - I choose angel hair cause it cooks the fastest.
  6. For this dish I break it in half or smaller to make it more manageable on a plate.
  7. By this time the pasta is done, the sauce is hot and everyone is starving...so
  8. Plate the sucker, sprinkle with the parmesan and pepper.
  9. Serve! (goes nicely with a mixed baby green salad)
