Vanilla Beef Fajitas

- vanilla beef FAJITAS: shopping list
- 3 chipotle peppers, chopped shopping list
- 2 cloves garlic, chopped shopping list
- 1/4 cup olive oil shopping list
- 1/2 tbs pepper shopping list
- 1/2 tbs salt shopping list
- 1 tbs vanilla shopping list
- 1 pound skirt steak, trimmed and cut into large pieces shopping list
- avocado AND caper SALSA: shopping list
- 1/2 fire roasted bell pepper, diced shopping list
- 1 avocado. diced shopping list
- 1 tomato, diced shopping list
- 1 red onion, diced shopping list
- 1/4 cup capers shopping list
- 1/4 cup light olive oil shopping list
- juice from 1/2 lime shopping list
- 1/4 cup chopped fresh cilantro shopping list
- coconut AND ANNATTO SEED SAUCE: shopping list
- 1 tbs masa flour shopping list
- 1 stick butter shopping list
- 1/2 (15-ounce) can coconut milk shopping list
- 2 tbs coconut oil shopping list
- 1/4 tbs rosemary shopping list
- 1 tbs annatto powder shopping list
- 4 dry ancho chiles shopping list
- 1/2 tbs salt shopping list
How to make it
- Start your grill
- VANILLA BEEF FAJITAS:
- Mix together chipotle peppers, garlic, olive oil, pepper, salt and vanilla. Place beef in mixture. Marinate a couple of hours, preferably overnight.
- Remove Beef from marinade. Pan sear or grill beef for 5 minutes per side.
- Slice and serve with Avocado and Caper Salsa and Coconut and Annatto Seed Sauce.
- AVOCADO AND CAPER SALSA:
- Grill bell pepper over flame or broil in oven, turning the pepper until the skin all the way around is slightly burnt and pulling from the pepper. Remove from heat. Place in a paper bad to cool. Once cool, remove burnt skin. Dice avocado, red pepper, tomato, onion, and garlic cloves. Mix with capers, olive oil, lime juice and cilantro. Set aside.
- COCONUT AND ANNATTO SEED SAUCE:
- In a saute pan, add flour and butter. Cook for 3 minutes over high heat. Slowly add coconut milk, coconut oil, rosemary, annatto powder, anchos and salt. Heat the ingredients. Remove from heat. Set aside.
