How to make it

  • Start your grill
  • Mix together chipotle peppers, garlic, olive oil, pepper, salt and vanilla. Place beef in mixture. Marinate a couple of hours, preferably overnight.
  • Remove Beef from marinade. Pan sear or grill beef for 5 minutes per side.
  • Slice and serve with Avocado and Caper Salsa and Coconut and Annatto Seed Sauce.
  • Grill bell pepper over flame or broil in oven, turning the pepper until the skin all the way around is slightly burnt and pulling from the pepper. Remove from heat. Place in a paper bad to cool. Once cool, remove burnt skin. Dice avocado, red pepper, tomato, onion, and garlic cloves. Mix with capers, olive oil, lime juice and cilantro. Set aside.
  • In a saute pan, add flour and butter. Cook for 3 minutes over high heat. Slowly add coconut milk, coconut oil, rosemary, annatto powder, anchos and salt. Heat the ingredients. Remove from heat. Set aside.

    This looks fabulous. Question: what could I use as a substitute for the Annatto seeds? I've never heard of these and highly doubt I will be able to find them around here. I'll do my best but in the meantime, could I use something else? What do they taste like?
