Vanilla Beef Fajitas Recipe

Ingredients
  • VANILLA BEEF FAJITAS:
  • 3 chipotle peppers, chopped
  • 2 cloves garlic, chopped
  • 1/4 cup olive oil
  • 1/2 tbs pepper
  • 1/2 tbs salt
  • 1 tbs vanilla
  • 1 pound skirt steak, trimmed and cut into large pieces
  • AVOCADO AND CAPER SALSA:
  • 1/2 fire roasted bell pepper, diced
  • 1 avocado. diced
  • 1 tomato, diced
  • 1 red onion, diced
  • 1/4 cup capers
  • 1/4 cup light olive oil
  • juice from 1/2 lime
  • 1/4 cup chopped fresh cilantro
  • COCONUT AND ANNATTO SEED SAUCE:
  • 1 tbs masa flour
  • 1 stick butter
  • 1/2 (15-ounce) can coconut milk
  • 2 tbs coconut oil
  • 1/4 tbs rosemary
  • 1 tbs annatto powder
  • 4 dry ancho chiles
  • 1/2 tbs salt

Directions
  1. Start your grill
  2. VANILLA BEEF FAJITAS:
  3. Mix together chipotle peppers, garlic, olive oil, pepper, salt and vanilla. Place beef in mixture. Marinate a couple of hours, preferably overnight.
  4. Remove Beef from marinade. Pan sear or grill beef for 5 minutes per side.
  5. Slice and serve with Avocado and Caper Salsa and Coconut and Annatto Seed Sauce.
  6. AVOCADO AND CAPER SALSA:
  7. Grill bell pepper over flame or broil in oven, turning the pepper until the skin all the way around is slightly burnt and pulling from the pepper. Remove from heat. Place in a paper bad to cool. Once cool, remove burnt skin. Dice avocado, red pepper, tomato, onion, and garlic cloves. Mix with capers, olive oil, lime juice and cilantro. Set aside.
  8. COCONUT AND ANNATTO SEED SAUCE:
  9. In a saute pan, add flour and butter. Cook for 3 minutes over high heat. Slowly add coconut milk, coconut oil, rosemary, annatto powder, anchos and salt. Heat the ingredients. Remove from heat. Set aside.

This is very interesting, have you tried it yet? I think I might have to try it.....:)


This looks fabulous. Question: what could I use as a substitute for the Annatto seeds? I've never heard of these and highly doubt I will be able to find them around here. I'll do my best but in the meantime, could I use something else? What do they taste like?
