How to make it

  • Place chicken pieces in a shallow container and pour cider over top.
  • Cover chicken and marinate overnight in refrigerator.
  • Remove chicken from marinade and reserve the marinade.
  • Combine flour, ginger, cinnamon, salt and pepper.
  • Coat chicken with seasoned flour shaking off excess.
  • Place coated chicken pieces in a rectangular baking dish the bake uncovered 40 minutes.
  • At 30 minute point in the baking process combine reserved marinade, brandy, honey and apple.
  • Place in medium saucepan and bring to a boil and simmer 10 minutes.
  • Pour apple mixture over chicken and continue cooking 25 additional minutes.
  • Baste with the pan juices every 10 minutes.
