Chicken With Apples And Cider

- 4 skinless chicken breasts with bone in shopping list
- 2 cups apple cider shopping list
- flour to coat chicken shopping list
- 1 tablespoon ground ginger shopping list
- 2 teaspoons ground cinnamon shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 2 tablespoons honey shopping list
- 1/3 cup brandy shopping list
- 3 apples cored and cut into slices shopping list
How to make it
- Place chicken pieces in a shallow container and pour cider over top.
- Cover chicken and marinate overnight in refrigerator.
- Remove chicken from marinade and reserve the marinade.
- Combine flour, ginger, cinnamon, salt and pepper.
- Coat chicken with seasoned flour shaking off excess.
- Place coated chicken pieces in a rectangular baking dish the bake uncovered 40 minutes.
- At 30 minute point in the baking process combine reserved marinade, brandy, honey and apple.
- Place in medium saucepan and bring to a boil and simmer 10 minutes.
- Pour apple mixture over chicken and continue cooking 25 additional minutes.
- Baste with the pan juices every 10 minutes.
