Ingredients
  • 1 butternut squash
  • 1 large sweet potato
  • 1 huge carrot
  • 1 large onion
  • a handful of diced fresh dill
  • feta cheese
  • cheddar cheese
  • jack cheese
  • 1.5 cups wild rice

Directions
  1. Begin cooking the wild rice.
  2. Chop onion and saute in oil in a large cast iron skillet
  3. Prepare all veggies by cutting them into bite sized cubes.
  4. Throw all the veggies into the skillet with the onions, stirring a bit so most of the onions are on top.
  5. Add a half cup water and cover to steam on med-high heat.
  6. About 15 min check to see if the veggies are soft. And make sure your rice is ok.
  7. Once veggies are soft, add all the fresh dill and stir. Add a bunch of garlic powder if you want.
  8. Crumble the feta all over the dish and then top with lots of cheddar and jack cheese.
  9. Cover and let the heat melt the cheese.
  10. Serve over wild rice with shoyu (soy sauce).
  11. Its really good!
