Curried Carrots and Lentils

- 1/2 cup dried lentils shopping list
- 1 1/2 cups water, 1/2 cup at a time shopping list
- 3 carrots, peeled and cut into 2-inch pieces shopping list
- 1/2 onion, chopped (I use a sweet yellow onion) shopping list
- 1/4 cup golden or sultana raisins shopping list
- 2 tablespoons olive oil (unsalted butter would be fine as well) shopping list
- 1 teaspoon salt shopping list
- 3/4 teaspoon (or more) high quality curry powder shopping list
- 1/2 teaspoon fennel seeds shopping list
- fresh ground black pepper to taste shopping list
How to make it
- Combine the lentils and 1/2 cup of water in a 2-quart microwave safe casserole. Cover and cook at full power for 5 minutes.
- Stir in the carrots and another 1/2 cup of water, recover and microwave another 5 minutes.
- Stir in remaining ingredients and final 1/2 cup of water, recover and microwave a final 5 minutes.
- Serve immediately.
- Cooking times may have to be adjusted if your microwave is much less than a 700 watt appliance.
