This would be my idea of a great dinner for two! I am quite a fan of filet and who can't handle a glorious balsamic glaze? This comes to us courtesy of LINDA W. at allrecipes.

Ingredients
  • 2 (4 ounce) filet mignon steaks
  • 1/2 teaspoon freshly ground black pepper
  • Salt to taste
  • 1/4 cup balsamic vinegar
  • 1/4 cup dry red wine

Directions
  1. Sprinkle freshly ground black pepper over both sides of steaks and salt to taste.
  2. Heat a nonstick skillet over medium high heat.
  3. Place steaks in hot pan and cook for 1 minute on each side or until browned.
  4. Reduce heat to medium low and add balsamic vinegar and wine.
  5. Cover and cook for 4 minutes on each side, basting upon turning.
  6. Remove steaks to two warmed plates.
  7. Spoon one tablespoon glaze over each steak and serve immediately.

Alterations


I did a very slight variation by wrapping the filet's in bacon and browning them on all sides in a bit of oil in a copper skillet (instead of a non-stick pan). That seems to give a bit more brown bits in the pan to add flavor to the sauce (not that it needs it). Either way, this is goodness.
