Fingerling Potatoes Sauteed With Sea Salt And Fresh Sage Recipe
FINGERLING POTATOES SAUTÉED WITH SEA SALT AND FRESH SAGE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hayden Estate in Caddo Mills, Texas in 1984.

Ingredients
  • 1-1/2 pounds fingerling potatoes unpeeled
  • 3-1/2 teaspoons coarse sea salt
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon freshly ground pepper
  • 10 fresh sage sprigs or leaves

Directions
  1. Put potatoes in a saucepan and add water to cover by 2”.
  2. Add 2 teaspoons of the sea salt and bring to a boil.
  3. Reduce heat to medium then cover and cook 20 minutes then drain well.
  4. Heat olive oil in a large skillet over medium high heat.
  5. When oil is hot add potatoes and turn them in the oil.
  6. Sprinkle with remaining sea salt, pepper and sage.
  7. Continue to cook turning until skins are lightly golden and sage is crisp about 10 minutes.
  8. Serve hot or at room temperature.
