Avocado Lime Chiffon Pie Recipe
AVOCADO LIME CHIFFON PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Weinberg Estate in Allen, Texas in 1987.

Ingredients
  • 1 avocado
  • 1/2 cup fresh lime juice
  • 1 cup granulated sugar
  • 1 package unflavored gelatin
  • 1/4 teaspoon salt
  • 3 eggs separated at room temperature
  • 1/2 cup milk
  • 1 tablespoon grated lime peel
  • 9” baked pie shell
  • Sweetened whipped cream

Directions
  1. Puree avocado with lime juice.
  2. In top of double boiler combine 1/2 cup sugar, gelatin and salt.
  3. Beat egg yolks lightly with milk and stir in.
  4. Stir over boiling water until gelatin dissolves about 5 minutes.
  5. Remove from heat then stir in lime peel then avocado puree.
  6. Chill until mixture mounds slightly when dropped from a spoon.
  7. Beat egg whites gradually adding remaining sugar until stiff but not dry.
  8. Fold into avocado mixture then turn into pie shell and chill until firm.
