Avocado Lime Chiffon Pie

- 1 avocado shopping list
- 1/2 cup fresh lime juice shopping list
- 1 cup granulated sugar shopping list
- 1 package unflavored gelatin shopping list
- 1/4 teaspoon salt shopping list
- 3 eggs separated at room temperature shopping list
- 1/2 cup milk shopping list
- 1 tablespoon grated lime peel shopping list
- 9” baked pie shell shopping list
- sweetened whipped cream shopping list
How to make it
- Puree avocado with lime juice.
- In top of double boiler combine 1/2 cup sugar, gelatin and salt.
- Beat egg yolks lightly with milk and stir in.
- Stir over boiling water until gelatin dissolves about 5 minutes.
- Remove from heat then stir in lime peel then avocado puree.
- Chill until mixture mounds slightly when dropped from a spoon.
- Beat egg whites gradually adding remaining sugar until stiff but not dry.
- Fold into avocado mixture then turn into pie shell and chill until firm.
