Vegetarian Crock Pot Enchiladas Recipe
Spicy and yummy enchiladas with no meat and is really easy to make:)

Ingredients
  • 2 cans of crushed tomatoes
  • 1 cup of green salsa
  • 1 can of black beans
  • 1 can of pinto beans
  • 1 can of corn
  • 1 can of green chilies
  • 1 can of enchilada sauce
  • 1/2 of a yellow onion(diced)
  • 1 garlic clove(diced)
  • 1/2 cup of cilantro (chopped)
  • 1 tsp of cumin
  • 1/4th cup of olive oil
  • 3 cups of Monterrey Jack Cheese
  • Tortillas

Directions
  1. In a crock pot combine the first seven ingredients.
  2. Cook on high for 1 hour stirring every once in awhile
  3. Combine the next 5 ingredients and saute on low for about 15 minutes creating a sauce
  4. Warm the tortillas by wrapping them in foil and heating in oven for 10 minutes at 325 degrees
  5. Spread the sauce mixture onto each tortilla then spread the crock pot mixture on top
  6. Roll into a wrap and place in a baking pan. Continue until all tortillas are wrapped.
  7. Spread remaining crock pot mixture on top of tortillas
  8. and sprinkle with Monterrey Jack Cheese
  9. Warm in oven for 10 minutes at 325
  10. Serve and Enjoy!!

These sound good- and you can alter the taste if you want by adding diced jalapenos and/or using fire roasted tomatoes--Will have to try this one thanks!
