LIGHT QUICHE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ouzo Estate in Seagoville, Texas in 1982.

Ingredients
  • 1 cup finely chopped white onion
  • 2 large eggs plus whites of 2 large eggs
  • 1 cup low fat milk
  • 1/2 cup fat free sour cream
  • 1/2 cup shredded part skim Jarlsberg cheese
  • 2 slices Canadian bacon chopped
  • 1 tablespoon grated parmesan cheese
  • 1/4 teaspoon nutmeg
  • 1 prebaked pie crust

Directions
  1. Heat oven to 350 then coat medium nonstick skillet with cooking spray.
  2. Add onion and cook 5 minutes until golden.
  3. Whisk onion and remaining ingredients in a bowl then pour into prebaked pie crust.
  4. Bake 45 minutes then cool slightly and serve.
