Hot Spinach Dip Recipe
A spiced up version of the original. Made with salsa and monterey jack cheese to give it a mexican kick, served with tortilla chips for a perfect dip..

Ingredients
  • 1 (10 oz) package frozen spinach, thawed and with liquid removed, chopped
  • 2 cups Monterey Jack cheese, shredded
  • 1 (16 oz) jar salsa
  • 1 (2.25 oz) can black olives, drained and chopped
  • 1 (8 oz) package cream cheese, softened and finely chopped
  • 1 cup evaporated milk
  • 1 tbsp red wine vinegar
  • salt and pepper (to taste)

Directions
  1. Preheat oven to 400 degrees F.
  2. Combine spinach, jack cheese, salsa, cream cheese, olives, evaporated milk, black olives, red wine vinegar, salt and pepper in a medium baking dish.
  3. Bake for 12-15 minutes, or until bubbly.

I made this recipe last night for friends and let me tell you, it was a HUGE hit and SO easy! The only thing I did different was use Coldby Monterey Jack Cheese. Thank you for sharing this recipe!
