This is a flavorful Mexican soup dish.

Ingredients
  • 1 tablespoon butter or margarine
  • 1 pound veggie hamburger crumbles
  • 1 onion, diced
  • 1 (16 ounce) can stewed tomatoes
  • 1 (16 ounce) can kidney beans, do not drain
  • 1 (8 ounce) can tomato sauce
  • 1/2 envelope taco seasoning
  • 1 1/2 cups water
  • 1 can corn, do not drain

Directions
  1. Saute the veggie crumbles until browned.
  2. Once browned, add all the ingredients to a crock pot and cook on high for 4 hours (or low for 6 to 8 hours).
  3. You can add any of the following as garnishes when you serve it: sour cream, grated cheddar, green onions
