Gluten free cornbread

- 1 cup skim milk shopping list
- 1 envelope plain gelatin shopping list
- 1 egg beaten shopping list
- 2 tablespoons mild olive oil shopping list
- 1 teaspoon xanthan gum shopping list
- 3/4 cup yellow cornmeal shopping list
- 1 cup GF All purpose flour mix shopping list
- 1/4 cup sugar (or honey if you prefer) shopping list
- 2 teaspoon non alumium baking powder shopping list
- 1/4 teaspoon seasalt shopping list
- 1/4 cup chopped green or red chili peppers (optional) shopping list
- 1/4 cup grated cheese (optional as well) shopping list
How to make it
- Heat oven to 400 degrees
- In Kitchen-aid mixing bowl add milk and bloom plain gelatin for 5 minutes
- Add remaining ingredients and beat on low for about 1 minute
- turn up to high speed and let mix a minte until thick
- turn batter into heated and buttered 9 inch cask iron skillet
- bake at 400 degrees for 22 minute or until a fork comes clean
- Let cool for 5 minutes cut into 8 pieces and serve
