Lamb Verde Stew

- 1 lb lamb cit into small bite sized pieces shopping list
- 2 - 15 oz cans whole tomatoes and juice shopping list
- 1 medium onion chopped shopping list
- 5 cloves garlic sliced thin shopping list
- 1 lb potatoes skin on, washed and cubed shopping list
- 1 lb zucchini sliced into rounds shopping list
- 3 -4 oz cans diced green chiles shopping list
- 1 c corn kernels (fresh or frozen work) shopping list
- 1 teas ground cumin shopping list
- 1 teas oregano shopping list
- 1c + 1 c chicken stock or wtaer shopping list
- salt and pepperto taste shopping list
- 1 T olive oil shopping list
How to make it
- into a pot heat the olive oil
- Add the lamb and brown (salt and pepper)
- When the lamb has brown add the onion and garlic and saute until the onion is translucent
- Crush the tomatoes as you add them, add the juice
- Add all the rest of the ingredients except one of the cups of chicken stock.
- Simmered covered for at lest 30 minute, adding the reserved stock if the stew gets to thick.
- Serve with corn bread or corn muffins.
