Yesterday was grilled lamb day. We did two recipes on the grill, this and the yogurt marinated boneless leg. This comes out exactly like the photo which is courtesy of Cooking Light, as is the recipe. This is definitely a keeper!

Ingredients
  • 3/4 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp paprika
  • 1/8 tsp coriander
  • 1/8 tsp cardamom
  • 1/8 tsp ground red pepper
  • 1 (1 1/2 lb) French-cut rack of lamb (8 ribs, about)
  • olive oil

Directions
  1. Combine first 7 ingredients to make the rub
  2. Rinse lamb and pat dry with paper towels
  3. Rub lamb all over with a small amount of olive oil
  4. Rub with salt mixture
  5. Place lamb on pre-heated grill that has been coated with oil
  6. Grill 10 minutes or until a thermometer registers 145 for medium rare, turning once.
  7. Let stand 5 minutes before slicing into chops

Oh my Pat if anyone could present a spectacular recipe for lamb it would be you. This rub is out of this world especially cinnamon which is so lamb friendly.
