Almond Float With Mandarin Oranges Recipe
ALMOND FLOAT WITH MANDARIN ORANGES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Chancing Estate in Paris, Texas in 1991.

Ingredients
  • 1-1/4 cup boiling water
  • 1/2 cup agar cut in pieces
  • 1 cup evaporated milk
  • 1/3 cup sugar
  • 1 tablespoon almond extract
  • 2 cup hot water
  • 1 cup mandarin oranges

Directions
  1. Add agar to boiling water and stir until thoroughly dissolved.
  2. Add milk and sugar then bring back to boil and boil 1 minute stirring constantly.
  3. Add extract then slowly add hot water continuing to stir until sugar is dissolved.
  4. As soon as mixture returns to boil turn off heat then pour mixture into bowl for setting.
  5. When it has cooled slightly cover and refrigerate at least 2 hours.
  6. Turn jellied mixture out onto flat plate then cut in 1" squares.
  7. Place squares in individual serving bowls with mandarin orange wedges and their juice.
  8. Cover and return to refrigerator until ready to serve.
