How to make it

  • Cream the butter until light.
  • Add the icing sugar gradually, beating until it is absorbed.
  • Combine the cornstarch and the flour and then slowly add the dry incredients to the butter mixture, beating until smooth.
  • This should make a stiff dough. Knead slightly. Add flour if necessary.
  • Turn the dough on to a lightly sugared board and roll out to a 1/4 inch thickness. Sugar the roller as needed as well.
  • Cut out as many maple leafs as you can with the dough to fill your cookie tray (no need to butter..there's enough in the dough).
  • Roll the remaining dough in to balls to make thimble cookies.
  • Bake at 300 degrees for twenty minutes or until lightly golden on the bottom and the edges.
  • In the meantime, measure the corn syrup and the raspberries in to a small saucepan and heat to boiling, mashing the berries as you go. Strain the glaze through a mesh strainer.
  • Spread the glaze on the still-warm cookies with the tip of a spoon.
