Pan Seared Salmon With Chipotle Beurre Blanc Recipe
This is a great way to cook salmon. The salmon is started in a frying pan and finished in the oven. The sauce is amazing. Serve with pan crisped new potatoes.

Ingredients
  • Beurre blanc sauce
  • 1/4 c finely diced red onion
  • 2 cloves garlic minced
  • 1/2 c whiskey
  • 6 oz pineapple juice
  • 3 T vinegar
  • 3 T honey
  • 2 teas paprika
  • 2 T tomato paste
  • 1 T Worchestershire
  • 1 1/2 T chipotle and adobo sauce minced (more chipotle for hotter)
  • 1 1/2 sticks chilled butter. cubed
  • For the salmon
  • 8 4-6 oz skinless salmon fillets
  • 1/2 c brown sugar
  • 1/4 c Kosher salt
  • 1 teas dried mustard
  • 1 1/2 teas ground cumin
  • 1/4 teas cinnamon
  • 1/2 teas cayenne

Directions
  1. Combine all the ingredients except the butter for the beurre blanc sauce in a sauce pan. Bring to a boil and immediately reduce to a low simmer. Simmer until reduced by at least 1/3. Remove from heat. Whisk in the butter a couple of pieces at a time until all the butter in incorporated. The sauce will be about room temperature at this point and ready to use.
  2. Salmon
  3. Mix the sugar and all the spices together until well incorporated. Rub one side of the salmon fillet generously with the seasoning (don't put any on the other side). Preheat the oven to 400 F. Heat a frying pan to med high heat. Coat the botton of the pan with a spray of Pam. Place the salmon seasoned side down and fry for 3-4 minutes. The sugar should start to caramelize around the edges. Place in a oil baking dish sugar side up. Bake for 10 minutes or until the salmon is just cooked through.
  4. Place 2 T of the beurre blanc sauce on a plate and place a salmon fillet on top with the pan crusted side up. Serve with pan crusted new potatoes.
