Ingredients
  • 3 cups sifted flour
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1 cup shortening
  • 1-1/2 cups sugar
  • 3 egg yolks
  • 1 cup jam
  • 1 cup applesauce
  • 1 cup buttermilk
  • 3 egg whites beaten until stiff peaks from when beater is pulled up
  • 1-1/2 cups raisins
  • 2 cups chopped walnuts
  • Powdered sugar

Directions
  1. Sift flour, baking soda, cinnamon, cloves, nutmeg, allspice and salt then set aside.
  2. Beat shortening until well blended.
  3. Gradually add sugar and egg yolks beating until light and fluffy.
  4. Stir in jam and applesauce then mix well.
  5. Add sifted ingredients alternately with buttermilk blending well after each addition.
  6. Fold in egg whites, raisins and walnuts.
  7. Turn into 2 square pans that have been greased and lined with wax paper.
  8. Bake at 350 for 50 minutes.
  9. Top with powdered sugar just before serving.
