Potatoes With Parsey Sauce

- 6 large red skin potatoes shopping list
- 1 cup firmly packed parsley shopping list
- 1/4 cup olive oil shopping list
- 1 cup chopped cucumber shopping list
- 1/2 lemon juiced shopping list
- 2 tablespoons minced dill shopping list
- 2 scallions chopped shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- poppy seeds for topping shopping list
How to make it
- Cook potatoes in their skins until done but still firm.
- When cool enough to handle quarter them lengthwise and slice 1/2" thick.
- Place sauce ingredients in a food processor and process until smooth and thick.
- Toss at once with the potatoes then transfer to shallow serving dish.
- Sprinkle with poppy seeds and serve warm.
