Southern Chicken N Dumplins

- 1 whole chicken cut up shopping list
- 4 cups self rising flour shopping list
- 1 1/2 cups buttermilk shopping list
- 1/2 cup vegetable shortning shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon black pepper shopping list
- 4 tablespoons butter (1/2 stick) shopping list
How to make it
- put the flour in a large bowl then add the vegetable shortning
- Cut the shortning in with a fork untill you achieve a grainy look
- Add the buttermilk a little at a time untill you have a good stiff dough
- Put a clean tablecloth on your table and sprinkle with flour
- Transfer the dough to the table and fold and knead 15 - 20 times
- roll the dough out on the tablecloth as thin as possible without tearing
- with a pizza cutter cut the dough into 1 - 1 1/2 inch strips then cut the strips 2 1/2 - 3 inches long
- Let the strips sit overnight (or 10 - 12 hours) to dry.
- fill a large stew pot with 8-10 cups hot water and add the chicken,butter,salt, and pepper
- bring to boil and lower heat and cook 1 hour or untill chicken pulls easily from the bone
- Remove the chicken and strain the remaining broth and return broth to the stew pot.
- bring to a boil and drop dumpling strips into the broth. reduce heat to medium low and cook for 45 min or untill dumplings are tender.
- While the dumplings are cooking de- bone the chicken and cut into bite size pieces.
- When the dumplings are done stir in the chicken and let sit to thicken 15 to 20 min.
