How to make it

  • put the flour in a large bowl then add the vegetable shortning
  • Cut the shortning in with a fork untill you achieve a grainy look
  • Add the buttermilk a little at a time untill you have a good stiff dough
  • Put a clean tablecloth on your table and sprinkle with flour
  • Transfer the dough to the table and fold and knead 15 - 20 times
  • roll the dough out on the tablecloth as thin as possible without tearing
  • with a pizza cutter cut the dough into 1 - 1 1/2 inch strips then cut the strips 2 1/2 - 3 inches long
  • Let the strips sit overnight (or 10 - 12 hours) to dry.
  • fill a large stew pot with 8-10 cups hot water and add the chicken,butter,salt, and pepper
  • bring to boil and lower heat and cook 1 hour or untill chicken pulls easily from the bone
  • Remove the chicken and strain the remaining broth and return broth to the stew pot.
  • bring to a boil and drop dumpling strips into the broth. reduce heat to medium low and cook for 45 min or untill dumplings are tender.
  • While the dumplings are cooking de- bone the chicken and cut into bite size pieces.
  • When the dumplings are done stir in the chicken and let sit to thicken 15 to 20 min.
