Jalapeno Mayo Recipe
Very savory mayo to brighten any sandwich or to dip your chips in!

Ingredients
  • 2 jalapenos
  • 2 large whole fresh eggs
  • 2 cups canola oil ( or really any vegetable oil. not olive oil!)
  • 3 tbsp of fresh cilantro
  • 2-3 cloves of garlic ( fresh)
  • salt and pepper
  • juice of two limes (meduim sized)

Directions
  1. De-seed jalapenos cut into small pieces
  2. squeeze limes
  3. combine jalapenos, juice, and cilantro into food processer puree smooth as possible
  4. season with salt and pepper
  5. remove and set aside, you dont have to rinse the mixer
  6. crack the two egg into the processer
  7. mix for 3-4 minutes, should be fluffy with lots of air bubbles
  8. with machine on full speed slowly(i repeat slowly. too fast it will break!)add oil
  9. when the two cups oil is properly emulsified mixture should be thick and creamy like mayonaise.
  10. important not to stop the machine while adding oil
  11. if mixture is not thick enough add more oil.
  12. combine jalapeno puree with mayo mix for 3-4 seconds
  13. remove
  14. mix with spatula and chill imediately
  15. jalapeno mayo DONE!
