Spinach With Raisins And Pine Nuts Recipe
The combination of the sweet from the raisins and the earthy flavor from the pine nuts is a great combination.

Ingredients
  • 4 tsp raisins
  • 2 1/4 pound of baby spinach
  • 3 tbsp olive oil
  • 6-8 spring onions (sacllions), thinly slices
  • 1/4 tbsp pine nuts
  • kosher salt and pepper to tast

Directions
  1. put raisins in small bowl and cover with boiling water
  2. let stand about 10 minutes, then drain
  3. steeam or cook spinach in a pan over medium heat with only the water that clings to leaves after washing 1 to 2 min.
  4. drain well and leave to cool
  5. once it has cooled chop roughly
  6. heat oil in fryinfg pan over medium low and saute oinions until soft
  7. add spinach,raisins and pine nuts
  8. raise heat and and cook through 2-3 min.
  9. season with salt and pepper
  10. serve warm
