How to make it

  • Preheat oven to 350 degrees
  • Spray an 8 x 11 baking dish with non-stick spray
  • In a bowl mix muffin mix, butter, eggs and sour cream
  • Spread evenly into baking pan
  • Arrange strawberries on top of cake
  • Bake 40 min. or until tooth pick inserted n the center comes out clean

    I believe the brand I used was Betty Crocker but I don't think it will matter as long as you get the package weight about the same.

    Hi Martha,
    Paulette here or Polly as most everybody calls me on here. I was curious, what brand of muffin mix do you use? Is it Jiffy brand or another one?
    Whatever you used to make it turn out as good as it did, that is what I'll get.
    I found your recipe in the BEAUTIFUL FOOD section of this site. When I saw it I couldn't help but think of my mom who loves strawberries. I think I'll make it for her! (Then you'll be making more than me happy too!)

    The original recipe called for 2 cups plain flour, 1 tsp baking soda, 1/2 tsp. baking powder, 1/2 cup brown sugar, 1/2 cup white sugar and 3 mashed bananas. This is a simplified version. I've tried it both ways and the taste is actually the same. Plus, both were tasted and rated by my food testers all not being able to tell the difference between the 2.
