Roast Beef Pizzaiola Recipe
When our kids were still home we often had beef chuck roasted slowly to fall apart tenderness. Here is an Italian version that we love .... I don't claim it's authentic ...

Ingredients
  • 2-1/2 to 3 lb. boneless beef chuck roast
  • 3 Tbs olive oil
  • 1 medium onion halved the long way and sliced into half rings
  • 1/2 green bell pepper sliced
  • 1/2 red bell pepper sliced
  • 2 cloves garlic chopped fine
  • 4 oz button mushrooms sliced
  • 28 oz (one can) diced tomatoes (or whole ones whacked up) and all the juice
  • 2 Tbs tomato paste
  • 2 whole bay leaves
  • 1 tsp salt
  • 1/2 tsp dry basel
  • 1/2 tsp oregano
  • black pepper mill

Directions
  1. Prehat oven to 350 degrees.
  2. On the stove, heat oil in a large oven safe pan at medium heat.
  3. Pepper the first side of the meat, put it into the pan pepper side down and pepper the up side.
  4. As it browns for 3 minutes prepare veggies.
  5. Turn meat and add the rest of the stuff.
  6. Roast covered in oven for two and a half hours or until completely done. (This cut is most tender that way.)
  7. Serve over spaghetti. Also goes well with boiled potatoes, mashed potatoes, and I've seen it on top of french fries.
