Chicken In A Wine Sauce With Cherry Peppers

- 4lbs chicken breat tenderloins or sliced breast pieces shopping list
- 4Tbs flour shopping list
- 4Tbs oil dicvided shopping list
- 1c jarred sweet cherry peppers,seeded and thinly sliced shopping list
- 1 15oz. can diced tomatoes(do not drain) shopping list
- 6 cloves garlic,minced shopping list
- 5 Tbs. juice from jar of cherry peppers shopping list
- 1c chicken broth shopping list
- 11/4c dry white wine shopping list
- 4Tbs dry sherry shopping list
- 3Tbs lemon juice shopping list
- 1/4c hot sauce(I like Frank's shopping list
- 1/2tsp black pepper shopping list
- 1Tbs dried thyme shopping list
- 1Tbs dried sage shopping list
- 2tsp oregano shopping list
- 1/c chopped,fresh parsley shopping list
How to make it
- Preheat oven to 425. wash the chicken and pat dry. Pound the chicken to 1/4" thick. Cut each piece so no larger than inner part of your palm. Place chicken in freezer bag with the flour and shake till all pieces are lightly coated.
- Heat 2 Tbs. of oil in skillet over high heat and flash fry chicken pieces about 1 min on each side.. Remove to a deep dish casserole.. Please note ,center of chicken will be pink.. The remainder of the cooking will be in the oven. When all chicken has been cooked,discard leftover oil from skillet.
- Wipe clean. Lower the heat to med and add sliced cherry peppers. Saute 1 min. Add tomatoes and garlic. Bring to a low boil 3 to 4 mins. Raise heat to high and add juice from peppers,broth,wine,sherry,lemon juice,hot sauce,pepper and the herbs. Bring to boil. Stir and boil 3 to 5 mins. Remove from heat and pour sauce over chicken,sprinkle with parsley. Care fully stir,cover tightly and place in center of oven,
- Bake 40 mins or until chicken is fully cooked. Remove from oven and let rest 5 to 10 mins before serving. Serve over rice or pasta
