Ingredients
  • 16 oz number 10 pasta (long tubes); cooked & drained
  • 4 cups any meat sauce
  • ----- CREAM SAUCE -----
  • 4 cups milk
  • 8 oz butter; (2 sticks)
  • 2 cups all purpose flour
  • 1 teaspoon nutmeg
  • salt and pepper; to taste
  • 4 eggs
  • 2 cups Kefalotiri or Parmesan cheese; grated

Directions
  1. In a saucepan, warm the milk and melt in the butter.
  2. Blend in flour, stirring constantly with a wire whisk.
  3. Stir vigorously until sauce thickens.
  4. Add nutmeg and salt and pepper, to taste.
  5. Remove from heat and cool.
  6. Beat eggs with wire whisk.
  7. Add 1/2 cup cooled sauce to the eggs and return to saucepan.
  8. Stir in grated cheese.
  9. Mix half of the cream sauce with the prepared pasta and set remaining sauce aside.
  10. Pour 1/2 the pasta mixture in the baking dish.
  11. Cover pasta with an even layer of meat sauce.
  12. Add remaining pasta mixture.
  13. Finally, cover the pasta with the remaining cream sauce.
  14. Sprinkle some additional grated cheese on top if you like.
  15. Bake, uncovered, at 350°F for 50 minutes or until the top is nice and golden brown.
  16. Let stand until slightly cooled before serving.
