How to make it

  • peel and chop onions into little tiny bits, let them simmer in a 1/4 of E.V.O.L. keep them on low until they become soft,
  • once soft add in the pin nuts, let simmer until those are soft - once both onion and nuts are soft add in 1/2 cup of chicken broth
  • chop of zucchini and carrots into bite sized peices
  • as the onions simmer chop up potatoes into slices and then cut the slices into quarters, once chopping add 1/2 cup of E.V.O.L. to pot and like simmer,
  • once potatoes become a little soft add in chopped up zucchini and carrots, let them boil
  • let pot sit, it will start to crackle and pop, add in the rest of the chicken broth and the spices
  • mix it up really well and then the potatoes should start to brown, once all potatoes are brown and start to mush together, remove from heat and let cool
  • as it cools add the onions into the potato pot and mix together
  • its now ready to serve!!
