This dish takes a few potatoes and stretches them into a yummy dish!!

Ingredients
  • 5 potatoes
  • 3 cups chicken broth
  • one zucchini
  • 3 organic carrots
  • 2 onions
  • garlic salt
  • 1/2 cup pin nuts
  • pinch of parslie
  • pinch of italian herbs seasoning

Directions
  1. peel and chop onions into little tiny bits, let them simmer in a 1/4 of E.V.O.L. keep them on low until they become soft,
  2. once soft add in the pin nuts, let simmer until those are soft - once both onion and nuts are soft add in 1/2 cup of chicken broth
  3. chop of zucchini and carrots into bite sized peices
  4. as the onions simmer chop up potatoes into slices and then cut the slices into quarters, once chopping add 1/2 cup of E.V.O.L. to pot and like simmer,
  5. once potatoes become a little soft add in chopped up zucchini and carrots, let them boil
  6. let pot sit, it will start to crackle and pop, add in the rest of the chicken broth and the spices
  7. mix it up really well and then the potatoes should start to brown, once all potatoes are brown and start to mush together, remove from heat and let cool
  8. as it cools add the onions into the potato pot and mix together
  9. its now ready to serve!!
