Ingredients
  • 1/2 cup fine grained bulgur
  • 1 pound medium fat ground lamb
  • 1 cup minced red onion
  • 1 jalapeno seeded and minced
  • 1 small sweet red pepper seeded and minced
  • 2 teaspoons crushed garlic
  • 1/2 teaspoon crushed red pepper flakes
  • 1-1/2 teaspoons freshly ground cumin
  • 1/2 cup chopped flat leaf parsley
  • 1/2 cup chopped fresh mint leaves
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

Directions
  1. Wash bulgur then put it in a bowl and sprinkle generously with enough water to moisten.
  2. Let stand 30 minutes.
  3. Add all the remaining ingredients then season with salt and pepper and knead to blend.
  4. Mix to a paste in food processor.
  5. Shape egg size pieces in thick oval patties.
  6. Grill on both sides until golden or cook in cast iron skillet heated very hot and lightly oiled.

I made something with this recipe the other night, more like a savory mince dish than burgers. I upped the burghal to 1 cup and used crushed chili from a jar. The family loved it so much its going to be a regular dish.

Alterations


change the burghal from .5 cup to 1 cup, soak in stock. Use crushed chili in a jar. Brown mince in pan. When brown, squish into the corner and cook the onion, garlic, chili and cumin. When the onion changes color, mix it all up. When that looks cooked enough, toss in the burghal, and diced pepper/capsicum. Add the mint leaves right at the end and serve with the parsley on top.
