Irish Potato Apple Cake

- 4 butter gold potatoes peeled and cut into small pieces shopping list
- 2 tablespoons butter shopping list
- 1 tablespoon granulated sugar shopping list
- 1/4 teaspoon ground ginger shopping list
- 3/4 cup all purpose flour sifted shopping list
- 4 granny smith apples peeled cored and sliced shopping list
- 2 tablespoons butter shopping list
- 1/2 cup firmly packed brown sugar shopping list
How to make it
- Preheat oven to 425 then lightly grease a pie plate.
- Cook potatoes in boiling salted water until tender about 15 minutes then drain and mash.
- Add butter, sugar and ginger and mix well then stir in flour to make a soft dough.
- On a lightly floured board form dough into a ball and divide in half.
- Roll half into 8” diameter circle and fit into the prepared pie plate.
- Arrange apple slices by overlapping them in 2 concentric circles over dough.
- Moisten edges with cold water then roll out remaining dough and place on top of apples.
- Press edges together and flute them to make a standing edge.
- With a sharp knife make 4 slits on top to allow steam to escape then bake 30 minutes.
- Remove from oven and cut a 2” circle in the top pastry to make a lid.
- Remove this carefully then add butter and brown sugar and replace the lid.
- Return to oven and continue to bake until butter and sugar have melted about 5 minutes.
- Slice and serve immediately with whipped cream or a dusting of confectioners' sugar.
