GOLDEN PLANTAIN ROLLS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ouzo Estate in Seagoville, Texas in 1982.

Ingredients
  • 6 plantain bananas peeled and sliced lengthwise into 4 pieces
  • 12 pieces egg roll rapper each cut into 2 pieces
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 pieces pandan leaves
  • 1 can fresh cut pineapple chunks
  • 4 tablespoons butter

Directions
  1. Wrap each banana slice with egg roll wrapper then fry in hot oil until golden.
  2. Drain well and set aside.
  3. Combine sugar, water and panda leaves then mix well and cook 20 minutes.
  4. Add pineapple and simmer until thick then add butter and pour over rolls just before serving.
