Ingredients
  • 1 porkfillet trimmed
  • 12 streaky bacon slices
  • 6 cloves garlic
  • 4 tsp basil paste
  • pepper
  • 1 pint cream
  • 1/4 gill calvados
  • 1/4 glass white wine
  • salt and pepper
  • 1 tsp cornstarch
  • small onion
  • 1 tomato skinned and de seeded
  • 1 oz butter

Directions
  1. lay bacon slices overlapping eachother so they form a sheet
  2. crush garlic and spread half on bacon
  3. spread 3/4 basil on bacon
  4. rollpork fillet in bacon
  5. secure bacon with skewers
  6. sear pork in pan and put in 200 c oven for 25 mins
  7. put pork aside to keep warm
  8. put pan on high flame
  9. add butter
  10. sweat chopped onion,garlic
  11. deglase with wine and calvados
  12. add cream and reduce by 1/4
  13. thicken with corn starch
  14. add basil
  15. adjust seasoning
  16. add rough chopped tomato
  17. slice pork into rounds
  18. serve with sauce
  19. don't forget to remove skewers
  20. accompany with taglietette,potato,risotto and veg
