How to make it

  • lay bacon slices overlapping eachother so they form a sheet
  • crush garlic and spread half on bacon
  • spread 3/4 basil on bacon
  • rollpork fillet in bacon
  • secure bacon with skewers
  • sear pork in pan and put in 200 c oven for 25 mins
  • put pork aside to keep warm
  • put pan on high flame
  • add butter
  • sweat chopped onion,garlic
  • deglase with wine and calvados
  • add cream and reduce by 1/4
  • thicken with corn starch
  • add basil
  • adjust seasoning
  • add rough chopped tomato
  • slice pork into rounds
  • serve with sauce
  • don't forget to remove skewers
  • accompany with taglietette,potato,risotto and veg
