Gourmet Garlic Bread Recipe
This is the best garlic bread ever ! Roasting an entire head of garlic is surprisingly simple, and well worth the extra effort.

  • 1 head oven-roasted garlic (see instructions below)
  • 1 fresh baquette, sliced about 1 1/2 inches thick (sourdough is the best choice if available)
  • ¼-1/2 cup quality olive oil
  • 1/2 cup butter, softened
  • ½ cup grated parmesan or romano cheese (or a combination of both

Directions
  1. For the Roasted Garlic:
  2. Preheat the oven to 400°F.
  3. Peel off loose outer skin of a garlic head, but leave the skins of the individual cloves intact. Cut off 1/4 to a 1/2 inch of the top of cloves with a sharp knife, exposing the individual cloves of garlic.
  4. Drizzle garlic liberally with quality olive oil, and wrap in foil. If you use heavy-duty foil, you don’t need to put it on a baking sheet. For multiple heads, try baking them in a muffin tin. Bake 30-35 minutes, or until cloves are very soft. It will have a golden color.
  5. For the Bread:
  6. Scoop roasted garlic cloves out of skins and mash with half of the softened butter. If if doesn't look like it will be enough, add a little more butter.
  7. Melt remaining butter and add olive oil (you can experiment with the ratio of oil to butter-everyone’s taste is different). Place bread on an ungreased cookie sheet. Brush one side of baguette slices with oil-and-butter combination.
  8. Next, spread the roasted garlic butter onto the prepared baguette slices. Top with a sprinkle of the grated cheese, and place in 400 degree oven with the rack close to the heat element. Watch bread carefully, and remove when it starts to brown lightly around the edges and cheese is starting to bubble slightly. Very addictive-but, hey, it’s got olive oil and garlic in it, so it must be good for you !

This is my all-time favorite way to make garlic bread. I often roast up bundles of garlic at a time (I mean it freezes so well too, you know?) and my guy is always begging me to make this. Great post!
