Spinach And Pasta Salad

SPINACH AND PASTA SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Davis Estate in Grand Prairie, Texas in 1987.
Ingredients
- 9 ounce package linguine shopping list
- 7 ounce package pesto with basil shopping list
- 5 cups shredded fresh spinach leaves shopping list
- 1 cup chopped fresh tomato shopping list
- 1 cup halved thinly sliced red onion shopping list
- 1/4 cup pine nuts toasted shopping list
- 3 tablespoons lemon juice shopping list
- 1/4 teaspoon salt shopping list
How to make it
- Cook linguine according to package directions then rinse and drain.
- Combine pasta, spinach, tomato, onion and pine nuts in large bowl.
- Combine pesto, lemon juice and salt in small bowl then add to pasta and toss well.
- Serve immediately or refrigerate.
