How to make it

  • Parboil the sweet potato (whole)
  • Cut into large chunks, and skewer separately
  • Tenderize the steaks with a mallet
  • Cut the beef into strips for skewering
  • Chop all veggies (except the acorn squash) into skewering-sized pieces
  • Randomly place meat & veggies onto skewers
  • When all skewers are filled, place on baking tray, drizzle overall with olive oil
  • Bake @ 350*F for 90 minutes, or until done to your preference
  • Bake covered with oil for first 60 minutes, then remove and finish baking uncovered
  • Place mushrooms in frying pan with the dehydrated onions
  • Pan-fry these in a little olive oil, with salt & pepper to taste
  • Prepare acorn squash thusly:
  • Cut in half; remove seeds.
  • Add 1 tbsp creamery butter to each half
  • Sprinkle 1 tbsp raw sugar into each half
  • Salt & pepper to taste
  • Bake alongside the shishkebabs until tender; remove from oven & tent with foil
  • To serve:
  • Place the acorn squash in the center of the plate
  • Fill with the mushrooms
  • Remove the shishkebabs from the skewer with a fork and arrange around the squash
  • ENJOY! :+D
