spring tilapia and island rice

- tilapia (2 per person) shopping list
- rasberries shopping list
- tangelos(2) shopping list
- garlic (1 clove) shopping list
- jalepeno (fresh) shopping list
- italian sweet red pepper shopping list
- lemon pepper shopping list
- chive onions shopping list
- rolling rock pale ale (beer) shopping list
- butter (2 tspn) shopping list
- *RICE* shopping list
- jasmine rice (1 1/2 cup) shopping list
- coconut milk shopping list
- lime shopping list
- mango shopping list
- plantains(optional) shopping list
- olive oil shopping list
How to make it
- FISH
- take your fish and set them in a pan and pour 1/2 a bottle of the rolling rock pale ale in the skillet
- squeeze the juice of both tangelos in the skillet
- then cut about 3 slices of the tangelo and put in pan
- take 1 1/2 cup of rasberries and squeeze half and throw into skillet so that the juices mix with the beer and then throw the rest of the rasberries in whole
- next cut up your fresh jalepeno into long strips and toss them in the skillet
- do the same with the italian red pepper
- cut one garlic clove finely and one chive onion and add to skillet.
- put your butter in
- turn stove on high untill it comes to a boil and then reduce to low while you start on your rice.
- ISLAND RICE
- first prep your water
- use a measuring cup the fluid cant exceed 2 1/2 cups
- mix approx. 1 1/2 cups water with half a can of coconut milk
- squeeze the juice of 1 lime and cut up 1 whole mango into small squares
- put all of this in a blender until mango is blended
- ( if you add plantain do not blend them!... cut them up and have them ready to add when you add the fluid.
- NEXT
- take your 1 1/2 cups of jasmine rice and 3 tblsp of olive oil and lightly cook on med high heat with no water until the grains get a toasty brown color (constantly stir) when your rice look good and toasty golden brown add your fluids (and plantains if you wish) reduce to med heat and cover.
- let cook for 20 min
- DO NOT EVER LIFT THE LID!!!!!!!
- after your rice has been cooking for 15 min turn the fish up to med high heat for the last 5 min
- when the rice is done turn heat off to both rice and fish
- serve with white wine or pale ale
- bon appetite
