Asparagus Basil Pesto Pasta With Italian Sausage Seasoned Walnuts Recipe

Ingredients
  • Pasta
  • 4 Zucchinis, julienne cut
  • Pesto
  • 1/2 lb fresh asparagus
  • 1 large bunch of basil
  • 1/4 cup of pine nuts
  • 2 large garlic cloves
  • olive oil
  • Italian Sausage flavored Walnuts
  • 2 cups soaked and dried walnuts
  • 3 t paprika
  • 1/2 t garlic powder
  • 1 t sea salt
  • 1/2 t fennel seed
  • 1 t freshly ground black pepper
  • 1/4 t crushed red pepper flakes

Directions
  1. First lightly salt zucchini and set aside to soften.
  2. Second in a food processor pulse pine nuts until finely ground then add asparagus and garlic.
  3. Pulse some more.
  4. Add basil last and enough olive oil to make a nice paste and pulse until totally combined.
  5. Clean out food processor to start walnuts.
  6. Add soaked walnuts and all spices together in food processor and pulse until you get a ground texture.
  7. Drain any liquid off the zucchini and top with pesto and sprinkle with spiced walnuts.
  8. Enjoy!
