How to make it

  • Trim rind on Brie from top and sides. Leave rind on bottom.
  • In food processor, pulse garlic 8-10 times.
  • Add tomatoes and basil and process for about 1 minute, until everything is finely chopped. Add oil from tomatoes if mixture seems dry, 1 Tbsp at a time.
  • If using pignolis, add and pulse 8-10 times.
  • On a microwave safe plate, cover top of Brie with tomato mixture.
  • Microwave on High for 20 seconds at a time, until sides are melted and center is soft.
