Brie with Sundried Tomatoes

- 1 Large Wheel brie cheese shopping list
- 1 Cup oil-packed Sundried tomatoes, oil reserved shopping list
- 6 leaves basil shopping list
- 2-4 cloves garlic shopping list
- 1/4 Cup Pignoli (pine) nuts, toasted (optional) shopping list
- 1 package multigrain crackers for serving shopping list
How to make it
- Trim rind on Brie from top and sides. Leave rind on bottom.
- In food processor, pulse garlic 8-10 times.
- Add tomatoes and basil and process for about 1 minute, until everything is finely chopped. Add oil from tomatoes if mixture seems dry, 1 Tbsp at a time.
- If using pignolis, add and pulse 8-10 times.
- On a microwave safe plate, cover top of Brie with tomato mixture.
- Microwave on High for 20 seconds at a time, until sides are melted and center is soft.
