Ingredients
  • pork tenderloin - the bigger the better
  • 4-6 medium-sized onions, sliced thinly
  • 3 medium sized firm apples,peeled, cored, cut into segments,
  • not too small
  • Calvados - about 4 Tablespoons
  • cream - about 1 cup
  • fresh thyme and rosemary
  • pepper
  • salt
  • butter and some 'butterschmalz' (sort of like gee)

Directions
  1. preheat oven to 90°C
  2. take fresh thyme and rosemary and salt, chop together or
  3. put into mortar and mix well
  4. add pepper to mixture
  5. makes it easy to rub into pork on all sides
  6. brown tenderloin evenly on all sides in sizzling hot fat
  7. (whatever your choice - gee is best)
  8. put aside
  9. wrap in aluminium foil
  10. stick in oven
  11. in pan used for meat, add some butter
  12. add onions and apple slices
  13. lightly brown
  14. add tenderloin with juices
  15. pour over the generous quantity of calvados
  16. light up (careful!!) and enjoy the flames and the aroma
  17. use cream to 'douse out' the flames,
  18. use spoon to turn tenderloin in 'gravy'
  19. remove, let sit for a couple of minutes
  20. while stirring the onions/apple/cream mixture
  21. check for seasoning
  22. you may be surprised - it needs hardly anything else
  23. slice up meat
  24. serve with mashed potatoes
  25. spoon gravy lightly over meat, onions/apple next to it
  26. looks lovely when sprinkle with some
  27. freshly chopped of parsley or fresh thyme leaves (which I used)
  28. and the taste.....hmmmm
  29. i am writing this the way i remember having cooked it - i hardly ever use recipes and i do not measure - makes it difficult to post things here, but i do try...
