Light Turkey Meatballs Recipe
A lighter version of meatballs that is just as tasty as the traditional version. I like this recipe because you can make the meatballs ahead of time, freeze, and then just saute them right from frozen when you're ready to eat them.

Ingredients
  • 3 slices whole wheat bread
  • 1/4 cup whole milk
  • 1 1/2 lb ground turkey
  • 3 scallions, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley
  • 1 large egg
  • salt and pepper

Directions
  1. Place bread in food processor and pulse until fine crumbs form. In a small bowl, mix breadcrumbs with milk; set aside 5 minutes.
  2. In a large bowl, combine turkey, scallions, garlic, parsley, egg, 1 1/2 teaspoons salt, 1/2 teaspoon pepper, and breadcrumb mixture; mix gently with a fork.
  3. With hands, form mixture into balls, each equal to 2 level tablespoons (should make 35).
  4. Arrange in a single layer on a rimmed baking sheet lined with parchment paper. Freeze in freezer for 1 hour to set their shape.
  5. Transfer frozen meatballs to an airtight container and freeze for up to 3 months.
  6. To cook: heat 1 tablespoon olive oil over medium high heat. Cook 20 frozen meatballs until browned - 5 to 7 minutes.
  7. Add 1 1/2 cups marinara sauce and 1/2 cup water and cook until heated through - about 5 minutes.

Another one you've not made for your mama - I'll have to make them myself...but what is "whoe wheat bread"??? Something new at Whole Foods? I know - I'm so funny...I have to admit, these do sound good.

You're so funny! It's not new from whole foods...I just go to the bread section and buy dirty bread aka whoe bread. Ha, maybe not appropriate for here:)
I think I gave you some of these last fall - you were going to see if you wanted to use them for Nanny's birthday? Maybe?


I love homemade meat balls, and the addition of the whole wheat bread crumbs, OH YUMMMY!
