Corn Pudding With Fresh Basil Recipe
This is one of my favorite sides for the summer. You can use canned corn but it's sooooo much better with fresh.

Ingredients
  • 4 cups corn (approx. 6 ears)
  • 1 cup packed fresh basil leaves, torn
  • 3 T all purpose flour
  • 1 T sugar
  • 1 cup milk
  • 1 cup heavy cream
  • 4 large eggs, lightly beaten
  • 1/4 t. salt

Directions
  1. Preheat oven to 350 degrees with rack in middle.
  2. Butter 2 1/2 quart shallow baking dish.
  3. Pulse 1/2 of the corn in a food processor or blender till coarsely chopped.
  4. Transfer to large bowl and stir in basil, flour, remaining corn and 1/4 t. of salt.
  5. Whisk milk, cream and eggs together and add to corn mixture until combined.
  6. Pour into prepared baking dish and bake 45 mins. to 1 hour until center is just set.
  7. Let stand 15 minutes before serving.

My cousin used to make something so similar and it was wonderful. The addition of basil to your corn pudding bumps up the appeal.
