Cran Orange Baked French Toast Recipe
Recently I had a cranberry orange french toast at a local restaurant. Here is my baked version. Made it for co-workers yesterday and they loved it. Easy, elegant and delicious!

Ingredients
  • 1 loaf ( approx. 16 oz.) Cinnamon Swirl Bread, cubed
  • 1 cup sweetened dried cranberries
  • 7 -8 eggs
  • 3 cups milk
  • 2 teaspoons vanilla
  • 1 15 oz. can mandarin oranges, drained
  • confectioner's sugar
  • syrup

Directions
  1. Place bread cubes in a 9 x 13 glass dish that has been sprayed with non-stick spray.
  2. Sprinkle cranberries over bread.
  3. In a medium bowl, whisk eggs, milk and vanilla.
  4. Pour egg mixture over bread.
  5. Cover and refrigerate over night.
  6. To bake, uncover the dish.
  7. Preheat oven to 350.
  8. Bake for 45 minutes or until golden brown and set in the center.
  9. Spoon mandarin oranges over top. Sprinkle with confectioners sugar.
  10. Serve with syrup.
