  • 1 head of cauliflower leaves removed and cut into Florette's
  • salt and ground black pepper
  • 100g -3 1/2 oz breadcrumbs
  • FOR THE SAUCE
  • 30g-1oz butter
  • 3 tbls plain flour
  • 1 1/2 tsp mustard powder
  • 450ml-15fl oz milk
  • 125g - 4 1/2oz mature cheddar cheese grated
  • handful of fresh thyme, parsley or chives

Directions
  1. boil cauliflower for 10 -15 min till just tender, rinse with cold water to stop cooking
  2. drain well and lay in an ovenproof serving dish
  3. melt the butter in a pan over a low heat
  4. add the mustard powder and flour and stir into a paste
  5. remove from heat and add milk a little milk at a time
  6. returning back to the heat keep stirring repeat this step till all flour is used and the (roux) is thickening
  7. cook for a further 2 min
  8. remove from heat and stir in about 2 thirds of the cheese
  9. pour sauce over cauliflower
  10. mix herbs, cheese and breadcrumbs together and sprinkle over cauliflower
  11. pop under the grill till cheese has melted and the breadcrumbs are brown and crispy
