How to make it

  • boil cauliflower for 10 -15 min till just tender, rinse with cold water to stop cooking
  • drain well and lay in an ovenproof serving dish
  • melt the butter in a pan over a low heat
  • add the mustard powder and flour and stir into a paste
  • remove from heat and add milk a little milk at a time
  • returning back to the heat keep stirring repeat this step till all flour is used and the (roux) is thickening
  • cook for a further 2 min
  • remove from heat and stir in about 2 thirds of the cheese
  • pour sauce over cauliflower
  • mix herbs, cheese and breadcrumbs together and sprinkle over cauliflower
  • pop under the grill till cheese has melted and the breadcrumbs are brown and crispy
