Cauliflower Cheese

- 1 head of cauliflower leaves removed and cut into Florette's shopping list
- salt and ground black pepper shopping list
- 100g -3 1/2 oz breadcrumbs shopping list
- FOR THE SAUCE shopping list
- 30g-1oz butter shopping list
- 3 tbls plain flour shopping list
- 1 1/2 tsp mustard powder shopping list
- 450ml-15fl oz milk shopping list
- 125g - 4 1/2oz mature cheddar cheese grated shopping list
- handful of fresh thyme, parsley or chives shopping list
How to make it
- boil cauliflower for 10 -15 min till just tender, rinse with cold water to stop cooking
- drain well and lay in an ovenproof serving dish
- melt the butter in a pan over a low heat
- add the mustard powder and flour and stir into a paste
- remove from heat and add milk a little milk at a time
- returning back to the heat keep stirring repeat this step till all flour is used and the (roux) is thickening
- cook for a further 2 min
- remove from heat and stir in about 2 thirds of the cheese
- pour sauce over cauliflower
- mix herbs, cheese and breadcrumbs together and sprinkle over cauliflower
- pop under the grill till cheese has melted and the breadcrumbs are brown and crispy
