How to make it

  • Sift the flour and the salt into a bowl, then stir in the sugar.
  • Rub in the butter until the mixture resembles fine breadcrumbs.
  • Pour in the liquid and beat until a soft dough is formed.
  • Knead gently for 3 minutes.
  • Pat the dough out until it is about 2cm thick then cut ito 5cm circles with a pastry cutter.
  • Transfer to a well greased baking sheet and lightly brush the tops with a little milk or beaten egg.
  • Put into the oven preheated to very hot (230C/450F or gas mark 8) and bake for 10 to 15 minutes or until golden brown.

    Scones are always a winner! Here in the States, we generally refer to these as biscuits, which is what you call (what we call) cookies. Too funny. And momo_55grandma is right - can't go wrong with a little blackberry jam! Mmmmm! Great post. - Natalie
